Café Colt is part of “The Colt Culinary Project”, the brainchild of Chef Harry Schwartz, who along with wife Laurie, recently redeveloped a formerly defunct vineyard in Lisbon, CT. Under their creative guidance, Heritage Trail Vineyards soon became a popular destination along the Connecticut Wine Trail. The Colt Culinary Project aims to provide restaurant and catering service, event and meeting space, employment and education through partnerships with local schools and neighborhood groups.
